Dr Klatz talks with nutritional expert Dr Shari Lieberman about her presentation on gluten. The percentage of gluten added to wheat has been greatly increased through genetic modification and our bodies are not designed to cope with it. We do not have the necessary enzymes to manage these levels and consequently we are suffering. Gluten can be found at the root of a myriad of health problems including obesity, through water retention and Celiac disease. Gluten is ubiquitous and needs to be addressed!
