Vitamin K is known as the blood clotting nutrient, but this fat-soluble vitamin is also important for bone health, heart health, and eyesight as well as healing. There are 2 main kinds of this vitamin, K1, phylloquinone, which is found in leafy green plants, and K2, menaquinone, which can be found in fermented foods, liver, and egg yolks, but it is also produced naturally in the intestines. Gut bacteria can synthesize K1 into K2 and make about 10% of our vitamin K supply.

According to a recent study published in the journal Nutrients, a quinoa-based diet was able to normalize glucose metabolism, and this effect was more pronounced among elderly people with impaired glucose tolerance, suggesting that quinoa is a healthy pseudocereal that is far more beneficial and nutritious than other cereal products.
